Peppermint Brownies Recipe

BROWNIES!!  YUM!!!  I love a good brownie, but being able to make them at home where you KNOW what is actually in the recipe is even better!  Here is the recipe I have been using to make brownies for the past couple years. (Sorry, I don’t have a website to give credit to for the recipe; I had seen it several times and finally jotted it down from either a website or someone’s Facebook page.)

Fake Betty Crocker Brownies

  • 1 cup sugar
  • 1/2 cup flour
  • 1/3 cup cocoa powder (I use a combination of Hershey’s Special Dark and Nestle’ Cocoa powders)
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of baking powder
  • 2 eggs
  • 1/2 cup of coconut oil (I use the virgin, unrefined coconut oil and it adds a subtle coconut flavor! :-) )
  • 1 teaspoon vanilla
  • 4 drops of Young Living’s Peppermint Vitality essential oil (optional but it is a nice addition)

Combine all the ingredients in your mixer bowl and mix until combined.  Pour into an 8×8 pan and bake at 350 degrees for 20-25 minutes.  Enjoy!!

NOTE:  I double the recipe and bake in a 9×13 pan for 40-45 minutes.

Yes, I’m sure that you could do some substitutions for the sugar and flour to make them healthier and gluten-free.  I haven’t done that yet but feel free to comment with any successful revisions you have made!  :-)
